Our aim is to get everyone to eat better quality British meat and that starts with education. We host our butchery courses in Staffordshire in our on-site artisan butchery school Perrys Field to Fork.

British Champion Master Butcher Stephen Hill and the Perrys of Eccleshall team deliver a wide range of specialist butchery and knife skills courses.

Our artisan butchery courses change throughout the year to reflect the seasons.

We only use pork, beef, lamb, and game supplied by local farmers which is reared within 5 miles of our school. Locally reared meat happens to taste much better thanks to the low food miles.

Butchery and knife skills courses are for beginners, intermediate, and advanced butchers. This means we have a course to suit everyone. You can come to us to build on your existing knife skills or learn something new like sausage making. Everyone that joins us wants to better their knowledge and gain an appreciation for locally reared heritage breed meat.

For chefs and seasoned professionals in the food industry we host a range of advanced courses where we’ll delve into more technical aspects of meat including marmoration and maturation.

Our butchery, sausage-making, pie-making and knife skills courses are a great way to learn new skills, have fun and enjoy tucking into some good food.

Yes, Perrys Field to Fork deliver a wide range of cookery classes and experiences including baking, bread making and world cuisine such as Italian, Persian, Spanish, French, Japanese, Indian, as well as smoking, grilling and BBQ cooking. We also host cooking experiences showcasing modern British cuisine.

Our tutors are experts in their field and as passionate about provenance and sustainability as we are.

Anyone can book an individual place on one of our open courses but children and under 16s must be accompanied by an adult.

You can also hire our cookery and butchery school to host a private course experience for you and your guests. We’ve hosted birthday and anniversary celebrations and pre-wedding celebrations and hen and stag parties too.

We also host private groups of colleagues from your company (or your clients) on an artisan butchery or cookery course.

Our artisan butchery and cookery courses are delivered at Perrys Field to Fork in our purpose-built cookery school in the centre of historic Eccleshall, in the heart of the Staffordshire countryside.

You can buy any course as a voucher or buy a gift voucher for an amount. And you can purchase physical vouchers, delivered by post or e-vouchers delivered by email. The e-vouchers are perfect for a last minute gift or someone who lives further afield.

Perrys Field to Fork artisan butchery and cookery school is on the same site as the award-winning Perrys of Eccleshall. It is easily accessed from Derbyshire, Shropshire and Cheshire and we are only minutes from the M6 (north and south junctions), A51, A50 and A34.
