Our aim is to get everyone to eat better quality British meat and that starts with education. We host our butchery courses in Staffordshire in our on-site artisan butchery school Perrys Field to Fork.
British Champion Master Butcher Stephen Hill and the Perrys of Eccleshall team deliver a wide range of specialist butchery and knife skills courses.
Our artisan butchery courses change throughout the year to reflect the seasons.
We only use pork, beef, lamb, and game supplied by local farmers which is reared within 5 miles of our school. Locally reared meat happens to taste much better thanks to the low food miles.
Butchery and knife skills courses are for beginners, intermediate, and advanced butchers. This means we have a course to suit everyone. You can come to us to build on your existing knife skills or learn something new like sausage making. Everyone that joins us wants to better their knowledge and gain an appreciation for locally reared heritage breed meat.
For chefs and seasoned professionals in the food industry we host a range of advanced courses where we’ll delve into more technical aspects of meat including marmoration and maturation.
Our butchery, sausage-making, pie-making and knife skills courses are a great way to learn new skills, have fun and enjoy tucking into some good food.
