Perrys’ Lamb Guard of Honour
Our traditional Lamb Guard of Honour is 4 racks of ‘french trimmed’ British lamb. The racks are cut from our best locally reared lamb by our Master Butcher and the team. The quality of our heritage breed British lamb reflects the close proximity in which it’s reared, which is less than 5 food miles. The Lamb Guard of Honour is quick to cook. It’s best cooked in a hot oven in a roasting pan with the fat side seasoned, glazed or covered with a crust. It is served in the traditional method with the bones interlaced and arching inwards to form an arch.
