Introducing Carl Norton, who developed an interest in rural countryside activities such as Game and the farming of beef, lamb and turkeys. Carl has the knowledge of animal welfare and is able to grade an animal. His passion for the craft of traditional nose-to-tail butchery grew over many years.
Carl moved to butchery and has never looked back after completing his apprenticeship at Perrys of Eccleshall, Master Butchers & Game Dealers, gaining his Level 2 in Butchery and Level 3 HACCP.
He started an apprenticeship here at Perrys of Eccleshall and his knowledge deepened further into the artisan techniques of curing and smoking.
Carl thrives in the kitchen and is developing new products with the art of Charcuterie. Charcuterie, is a generic term for products traditionally sold by Charcutiers (pork butchers).
